Red Mountain Spa Shrimp Diablo
 
This fiery dish comes together quickly. Perfect for a cold winter night or a cool Autumn evening.

You’ll Need
Shrimp
  • 16 each Jumbo Shrimp
  • 1 cup Roma Tomatoes, seeded and diced small
  • 2 teaspoons minced garlic
  • 2 teaspoons minced shallots
  • 4 tsp Cilantro, chopped
Seasoned White Wine
  • 1 cup White Wine
  • 2 tablespoons Paprika
  • 2 teaspoons Chile Powder
  • 2 teaspoons Chipotle with Adobo, chopped
  • 3/4 teaspoons Salt
Millet Polenta Cakes
  • 3 tablespoons cooked Millet
    (1 ½ tablespoons Millet, 3 tablespoons Boiling Water)
  • 3 tablespoons Yellow Onion, diced
  • 1/2 teaspoons Garlic, minced
  • 2 oz Polenta Cornmeal
  • 6 oz Water
  • 1 1/2 tablespoons Smoked Gouda, ¼ Inch Diced
  • pinch of salt

Now Do This
  1. Prepare Millet Polenta Cakes
  2. Pour Boiling Water on Millet. Let set until cooled (pour off excess water).
  3. Bring Water, Onions, Garlic and Salt to a boil. Reduce heat to simmer.
  4. Whisk in Polenta (make sure it does not lump). Cook 5 minutes.
  5. Add Gouda. Mix until dissolved.
  6. Add Cooked Millet.
  7. Spread on silpat in 1/2″ thick rectangle and cool.
  8. Cut rectangle in half. Cut squares diagonally into triangles.
  9. Sauté or place on grill to lightly char.
  10. Prepare Seasoned White Wine Sauce
  11. Place wine, paprika, chile powder, chipotle, and salt in shaker cup and blend well.
  12. Prepare Shrimp
  13. Bring Pure Olive Oil to smoke point
  14. Add Shrimp. Sauté 2 minutes and turn.
  15. Add Diced Tomatoes. Sauté 1 minute.
  16. Add Minced Garlic and Shallots. Sweat 1 minute.
  17. Add 1 cup Seasoned White Wine. Reduce until thickened
  18. Place Millet Polenta Cake on plate. Point side towards middle of plate.
  19. Arrange Shrimp layered and tail up.
  20. Pour Sauce on Shrimp.
  21. Enjoy!
